Pounds Lost: 5.0   |   Pounds to go: 56.8

The scale didn’t even move this morning. Same weight as yesterday. Hey, at least it didn’t increase. Right?

Today is the start of Week 3. This is going to be an interesting week. Today I have an out of office meeting which will run through my afternoon snack time. Since that snack is supposed to be fruit & yogurt (substituted with cottage cheese) I’m going to have some difficulty. I don’t exactly feel comfortable whipping out a package of cottage cheese in the middle of a meeting with 12 people. I might be able to pull off eating some grapes though. I could also keep some almonds in my pocket. I will give that a try.

Later this week will be harder. On Thursday I will be driving out of town and will have no place to heat up breakfast or lunch. I’m going to call my “councilor” to figure out how to handle this. We’ll find out just how useful she really is.

The Pecan Glazed Chicken* ($7.69) cooked fairly well in the microwave without stirring. I’m not a super big fan of Pecans, but it was a tasty lunch. On the other hand, I think I made the wrong choice for my salad dressing. The Creamy Herb Dressing* ($Not Found) has that “diet” taste that I can’t stand. From here on out I will definitely just go with the vinaigrette.

The Cheese Ravioli* ($Not Found) is one of the items that is not kept frozen. It’s packaging is quite different and so is the cooking instructions. For this item, you just peel up the corner of the film, then cook. I thought I would give it a go and see how these instructions fared… and it was ok. They were cooked and not at all spongy like the last Ravioli I had. But then again, I’m pretty sure the last ones came frozen… maybe that is why they turned out so bad.

For the vegetable portion of my dinner, my wife had made Paleo dish that consisted of various fresh vegetables with chicken. Ground up into a hash of sort. This is eaten lettuce-wrap style. The chicken was not really on the menu for me, but I convinced myself that it would be ok… and it just smelled & tasted WAY better than any of the Jenny Craig food.
